Ingredients:

• 1 small can crushed pineapple, undrained
• 3 cups carrots, shredded
• 1 teaspoon cinnamon
• 1/2 cup coconut flakes
• 1 cup egg beaters
• 2 cups flour
• 1/2 teaspoon salt
• 2 cups sugar
• 1 cup unsweetened applesauce
