Ingredients:

  • 2-1/2 c all-purpose flour, sifted
  • 1 c unsalted butter, cold, cut into pea-sized pieces
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 1 tsp lemon zest
  • A few Tbsp ice water
  • Vegetable shortening for greasing pie pan
  • 5 large egg yolks
  • 1-1/4 c water
  • 1-1/4 c granulated sugar
  • 1/3 c + 1 Tbsp cornstarch
  • 1/2 c lemon juice
  • 1 Tbsp lemon zest
  • 5 large egg whites, at room temperature
  • 1/2 tsp cream of tartar
  • 1/2 c granulated sugar
  • 1/2 tsp vanilla extract
