Ingredients:1 c mushrooms, chopped2 c baby spinach1 (2 Tbsp) shallot, chopped1/4 c Parmesan cheese3 large eggs, whisked1/2 Tbsp extra-virgin olive oil1/2 Tbsp buttersalt and pepper (about 1/4 tsp each)Course: antipasti,morning meal,starter,brunch,snack,appetizer,breakfast,antipasto,hor d'oeuvre
