  • 2 extra-large eggs (or 2 large+ 1 egg white)
  • 1 cup all-purpose flour (7 oz.)
  • 5 1/2 pounds Plums (after skinning and pitting)
  • 3/4 teaspoon pumpkin pie spice, divided
  • 1/4 teaspoon salt
  • 1 cup sugar+ 1 Tb
  • 1 cup unsalted butter, room temperature (could use shortening)
