About The Dates of Passover

The Hebrew dates of Passover this (and every) year are from the 15th through the 22nd of Nissan (one day less in Israel).

On the secular calendar the dates are from sundown April 19 until after dark on April 27 (oh yes, and one day less in Israel !).

The unusual circumstance is that Passover 2008 begins motzai Shabbos – at the end of the Jewish Sabbath. In other words, the first seder will take place on Saturday night, April 19, 2008.

So what? you ask. The day before Passover, the one followed immediately by the first seder, has a usual routine. When that day happens to be

Saturday – Shabbos – the routines change drastically.

Because of Sabbath restrictions:

A b’chor (firstborn son) cannot fast on Shabbos.

You cannot search for chametz on Friday night.

You cannot burn the chametz on Shabbos morning.

We can’t nullify our chametz on Shabbos.

We must nevertheless have bread of some kind for our

Shabbos meals (we can’t eat matzo yet).

Here is a summary of what to do this year:

1) Search for chametz on Thursday night after dark.

2) Burn your chametz Friday morning.

3) Ta’anis B’chorim – the fast of the firstborn – takes placeon either Thursday or Friday. Local customs vary.

4) Important: Make all preparations for the seder on Friday.Start setting the table for the seder after dark on Saturday night.This allows you to relax in the company of yourfamily all day long on Shabbos. Enjoy it!

5) Set aside rolls for your Shabbos meals.

6) The rolls should be just enough for your needs;not more than can be eaten completely.

7) Select a place to eat that can be thoroughly cleaned.

8) Consume or properly dispose of all the crumbs.

9) Finish really early – by 9:00 a.m. in some cities. (Important!)

To repeat – this is a summary only. You need more information and a knowledgeable mentor.

The variety of New York style cheesecake recipes exists mainly in the slight variations in the base ingredients of the recipes. Some may have a touch more cream, or a touch less. Some others may split between cream and Neufchatel cheese. I’ve even seen some that attempt to use ricotta cheese, although not with great success.

If you’d like to make some changes in the basic composition of your own New York style cheesecake recipe, you’re free to experiment. However, bear in mind that you need to keep the proper proportion of ingredients to keep the base texture of the cake smooth, and to keep it from collapsing into cheese soup.

The main source of difference in the recipes is in the “other” dairy fats that go into the recipe. New York style cheesecake is actually rather forgiving, as long as you keep the ratios correct. Let’s look at some three of the most popular dairy additions:

Sour cream: This is my own personal favorite accompaniment for the cream cheese. The tanginess of the sour cream mixed with the smoothness of the cream cheese and the sugar makes the palate fairly dance. And as a side benefit, the use of sour cream gives the cheesecake a bit more shelf life. The result of sour cream use is a very smooth, velvety texture with just a bit of resistance to the bite. It is very much in keeping with the traditional New York style cheesecake recipes.

Sweetened condensed milk: For those who like their cheesecake sweet, and I mean really, really sweet, this is the route to follow. A cheesecake made with sweetened condensed milk, such as Eagle brand or one of the many house brands, will be the sweetest of all the New York style cheesecake recipes. In fact, it may well be too sweet for some palates.

Buttermilk: Yes, believe it or not, there are daring individuals who try to make cheesecakes with buttermilk. The less said about these poor fools the better.

Sour cream is the traditional cheesecake addition, but feel free to experiment!

The main Passover activity is the seder which takes place on the first two evenings of the holiday (only one if you live in Israel). At the seder a special seder plate is used to display the needed foods. They are all symbols or reminders of the story of the redemption of the Jewish people from slavery in Egypt. The story is told in the Passover haggada.

The seder meal has some indispensible components. The most visible is the matza, the unleavened bread. It symbolizes slavery but also represents self-control. Self-mastery is what Jews need to become faithful servants of their Creator who saved them from Egypt for just that purpose. Round, square, hand or machine made, matza is kosher as long as it’s under kosher supervision.

Wine or grape juice – four cups for each participant – is also needed. Wine and matza are the two items that need the most care to be kosher.

The next item is maror – a bitter herb. Horseradish root is the sinus-clearing champion when it comes to bitterness. You can also use romaine lettuce. The bitter herb is used at two separate points in the seder and reminds the participants of the bitterness of slavery.

Also on the seder plate are a bone with meat on it symbolic of the Passover lamb sacrificed until the Temple in Jerusalem was destroyed. A hardboiled egg symbolizes the actual destruction of the Temple.

Charoses – a sweet concoction of wine, apples and nuts – is a reminder of the mortar used by the Jewish slaves. You’ll need a recipe.

A plain vegetable – like radish or celery are common – and salt water for dipping are also part of the proceedings.

Passover foods for the seder meal must be prepared on a weekday prior to the seder night. We don’t prepare on Saturday – it is Shabbos, the Sabbath. Use that day to relax and enjoy your company. I also recommend that you find a mentor, such as a rabbi and begin planning well in advance. You can do it!

The noodles cook in 1 minute once the water boils and the chicken only needs a few minutes of stir frying. The dish is low in fat and healthy, and sure to be a hit for dinner on those busy nights. Why not bring out the chopsticks and practice up on your skills.

To thinly slice the chicken, place the breasts in the freezer for a few minutes to partially freeze the meat. The breasts will then be firm but not hard and easy to slice thin. Be careful not to freeze solid however, frozen chicken is nearly impossible to slice. Instead of the ramen noodles, you could also serve this recipe over stir fried rice or alone with additional vegetables.

Stir Fry Chicken with Zucchini and Noodles

1whole or 2 halves chicken breast, diced or sliced thin

1 Tablespoon oil

1 clove garlic crushed, or 1 teaspoon minced garlic

2 tablespoons light soy sauce

1/2 cup bamboo shoots, sliced into matchsticks

14 cup canned mushroom slices

1 1/2 cups diced zucchini

1 Tablespoon cornstarch

1/4 cup water or chicken broth

3-4 packages chicken flavored ramen noodles depending on your guests

  1. Put on the water for the noodles. Ramen noodles cook fast, follow the package directions, but you will drain them for serving. There is no need to cook them separately, just do them all in the same pot. When the cooking time is up, take them off the heat; keep them warm until the chicken is done, then drain.
  2. Stir fry the chicken over high heat with the garlic in a small amount of oil. When it turns white, add the soy sauce and continue stirring for a 2 to 3 minutes.
  3. Add the zucchini, bamboo shoots, and mushrooms. Continue cooking for a few more minutes
  4. Mix the cornstarch with the water or broth. Stir into the mixture and cook, stirring until thickened.
  5. Serve the Chicken with Zucchini over a bed of drained ramen noodles. Serves 4.

Kosher style food also doesn’t contain mixtures of Kosher dairy and kosher meat, also forbidden according to the halakha. Jews who strictly adhere to laws of Kashrut don’t eat in restaurants of Kosher style, but those who keep only a degree of Kosher, may eat Kosher style food.

Kosher food in America and many European countries has become a certain symbol or brand of Jewish national food. Many of the buyers of kosher food hold the belief that Kosher is not only food prepared according to Jewish law, but also a symbol of healthy, tasteful food.

There is a certain simplicity to keeping kosher if you are a person of the Jewish faith. The rules are stated in the Torah, and there not difficult to understand. Its not necessary to be Jewish to read and understand the laws as they are stated.

Here are the basic rules:

1. Certain creatures are not to be eaten, not even the smallest parts of them, and this includes their eggs if they are a fowl.

2. The creatures that are okay to eat must be killed according to the “law” as it is stated in the Torah.

3. No blood from any creature may be drunk; it must be drained completely from the body or broiled away.

4. Certain parts of creatures that we are allowed to eat; may not be eaten.

5. Meat can not be consumed with dairy, and they are not premised to come into contact with one another, and the utensils that are used to prepare and eat them shall not come into contact with one another.

6. No non-Jewish produce may be eaten.

If you are a vegetarian, you are accustom to living a kosher lifestyle. The most difficult part of living a kosher life style comes to dealing with meat products. There is a ritual that must be followed when killing a living animal for food. There are several step that must be followed other wise the animal may not be eaten. In Leviticus and Deuteronomy it is stated that any animal that has cloven hooves or chews its cud shall not be eaten, and it is the same for anything with fins and scales. The same goes for fowl and the Torah give us a list of which one we are permitted to eat and which ones we can and can not eat. This leaving everything else open for us to consume as food.

Keeping kosher and eating meat products is difficult unless there is a kosher butcher shop in your neighborhood, or the meat is wrapped and stamped that it is kosher. Kosher meat must be slaughtered by a Shochet. A Shochet is not your run of the mill butcher, he is a butcher who is devout, and obedient when it comes to observing the Jewish law. The shochet is well trained in practice of slaughtering, it is said that the animal being slaughtered feels very little if any pain at all when it is put to sleep. This is because it has been stated that there is to be no unnecessary pain or stress is to be put on the animal that is being butchered. If the knife used is found to contain the slightest nick, or the animal was not properly dispatched, the meat will not be labeled as being kosher and there for may not be eaten by single Jewish person, but the meat is permitted to be sold to those of the non-Jewish faith.

Maintaining a kosher life style takes time, thought, and preparation. When the food is placed on the table, it smells, looks and tastes the same, looks as a non-kosher meal. Keeping kosher is not so much about the food, as it is the ritual behind it’s preparation.
