Butterscotch Pie

Ingredients:

  • The Pie Crust
  • 1 sleeve of graham crackers (about 1 1/2 cups)
  • 5 tablespoons salted butter, melted
  • 1/4 cup sugar
  • 3 tablespoons unsalted butter
  • 1/2 cup packed dark brown sugar or ½ cup packed golden brown sugar + 1 teaspoon
  • 1 cup heavy cream
  • 1 cup 2 percent milk
  • 1/4 teaspoon salt plus a pinch more
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 2 teaspoons scotch whiskey (optional)
  • The Pie Topping
  • 1 1/2 cups heavy whipping cream (my apologies! this originally said ½ cup. fixed now!)
  • 1/2 teaspoon vanilla
