- 6-8 oz mushrooms, sliced
- 2 cups nonfat milk
- 1 tablespoon Extra-Virgin Olive Oil
- 1/3 cup plain yogurt
- 1 cup quinoa, uncooked
- Salt and pepper, to taste
- 3 boneless, skinless chicken breasts
