Cheesy Chicken and Vegetable Quinoa

  • 1/4 cup bread crumbs (Panko or make your own)
  • 1 head broccoli, cut into florets
  • 1 cup Cheddar cheese
  • 1 cup Flour
  • 1½ Tbs. Chopped Garlic
  • 6-8 oz mushrooms, sliced
  • 2 cups nonfat milk
  • 1 tablespoon Extra-Virgin Olive Oil
  • 1/3 cup plain yogurt
  • 1 cup quinoa, uncooked
  • Salt and pepper, to taste
  • 3 boneless, skinless chicken breasts
