Quick Apple Ginger Pie


  • 2 pie shells (1 if you want an open-faced pie)
  • 4 mediums apples, peel, cored, quartered and sliced
  • small piece of fresh ginger, a little less than an inch or so,
  • 1 lemon, juiced
  • cup sugar (I used half brown and half white)
  • 1 tablespoon ground cinnamon
  • teaspoon ground nutmeg (depending on how much you like the spice)
  • 1 tablespoon flour
  • 1 egg wash, optional (1 egg white and a tsp of water)
  • pinches of sugar for sprinkles
