Ingredients:

  • 2 tablespoons vegetable oil
  • 1 medium onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1/4 cup dry white wine or chicken stock
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon green curry paste, or more to taste
  • salt and pepper, to taste
  • 1/4 cup Thai basil leaves
  • 2 hot red chilies, seeded and thinly sliced for garnish
