Citrus Chicken With Apricot, Peanuts & Mint

Ingredients:

  • 1/4 teaspoon Apple cider vinegar
  • 1 tablespoon Butter
  • 3 Chicken breast fillets cut into thin strips
  • 3 Green chilly (increase for more spicy)
  • 1 teaspoon Freshly ground ginger paste
  • 1 tablespoon Lime juice
  • 3 sprigs Mint, leaves only, chopped
  • 3 cups Freshly Made Orange juice
  • 2 teaspoons Orange zest
  • 1 cup Roasted Peanuts
  • Salt to taste
  • 3/4 tablespoon Sugar-
  • 8 cups Dried apricots – chopped into small pieces and soaked in water for 3 hours (drain when ready to cook)
