Ingredients:
- A large handful of fresh basil leaves
- 40gr / 1.5 oz. (roughly) of butter to cook the pancakes
- 2 cans tomatoes
- 4 large eggs
- 170gr / 6 oz. plain flour
- 4 large garlic cloves chopped finely
- 100gr / 3.5 oz. parma ham
- 375gr / 13 oz. mozzarella di bufala
- 2 tbsp olive oil
- 150gr / 5 oz. finely grated parmesan cheese
- 500ml / 17 fl. oz. reduced fat milk
- ¼ tsp of salt
- Salt and pepper to taste
- 2 shallots chopped finely
