Ingredients:

  • 6 bay leaves
  • 1 tablespoon black peppercorn
  • 1/2 teaspoon cardamom
  • 1 pinch of cinnamon, allspice and ginger
  • 100 grams corn flour
  • 1 tablespoon flour
  • 4 cloves garlic
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground sweet paprika
  • 1/2 teaspoon ground pepper
  • 300 milliliters light beer
  • 1/2 cup peanut oil
  • 500 grams perch fillets (fresh or frozen and thawed)
  • 1/2 tablespoon sea salt
  • 1 tablespoon seasoning mix (or Old Bay seasoning)
