  • 4 large baking potatoes, washed and scrubbed
  • 1/2 cup Butter
  • 1/2 cup dry white wine
  • 3 tbsp flour
  • 2 tbsp chopped fresh dill
  • 1 lb mixed fresh mushrooms, sliced
  • 1/4 cup chopped fresh parsley
  • Kosher salt
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup thinly sliced shallots
  • 1/2 cup sour cream
  • 1 tbsp sweet paprika
  • 1 cup chicken or vegetable broth
