Ingredients:

  • 2 tbsp. coconut oil
  • ½ cup coconut sugar less 1 tsp. (sometimes I use only 1/4 cup if the blueberries are nice and sweet)
  • 1 organic egg
  • 1 tbsp. freshly grated lemon zest
  • 1 cup GF all purpose flour
  • ½ tsp. sea salt
  • 2 tsp. aluminum free baking powder
  • 1-cup organic frozen or fresh blueberries
  • ¾ cup coconut milk
  • 1 tbsp. pure maple syrup
  • 1 tbsp. organic GF ground cinnamon
